Koji grain yeast from the Chinese company Angel is a special mixture that can saccharify and ferment almost any starch-containing raw material without its pre-treatment.
Koji has been used in Asia for over a thousand years to produce high-quality beverages from a variety of starchy raw materials.
With Koji Angel you can make whiskey and other drinks from grains, cereals and other starchy raw materials: rice, corn, potatoes, wheat, barley, rye, oats, cassava, sorghum, etc.
Koji has the ability to break down the grains, so they do not need to be processed or crushed before being added to the mash.
All fermentation takes place in the usual way, just like for ordinary sugar wort - there is no need to apply heating, temperature breaks and boiling for saccharification.
In addition, Kodzi Angel contains alpha, glyco- and phytoamylases, which can increase the strength of the wort.
Kodzi Koji Angel grain yeast has the following quality characteristics:

A 500g package is enough for about 250-300 liters of wort
To prepare 25 liters of grain wort, you will need 20 liters of water, 5 kg of raw materials (malt, grain, etc.) and 35-50 grams of Koji Angel yeast (in the proportion of 7-10 grams per 1 kg of raw materials)
Instruction:
1) Water should be added in the following proportion: 4 - 5 liters per 1 kg of raw material. The water should be at room temperature
2) The yeast must be diluted in water at 23-30°C (in the proportion of 7-10 grams per 1 kg of raw material)
3) The solution should stand for 5-10 minutes, after which it should be added to the main mash
4) The temperature of both solutions should be approximately the same, the difference should not be more than 10°C
5) It is recommended to stir twice a day for the first 5 days
6) Ensure a constant room temperature in the range of +23°C to +30°C
7) The fermentation process lasts about 2-3 weeks. At temperatures below the optimum, the fermentation period increases.
