Yeast Turbo Koji distillation yeast 50g
Yeast Koji turbo - active dry alcohol yeast with the original Asian Rhizopus oryzae strain and enzymes - allows fermentation of starch mash: from flour, ground grains (rice, corn, wheat, etc.), without hot milling.
At a temperature of 30°C, the enzymes in the mixture break down the starch into fermentable simple sugars, which the yeast processes into alcohol.
The mixture does not require the addition of nutrients. The fermentation time is about 3 weeks.
Method of use:
1) Pour 15 liters of water at 45°C into the fermentation tank
2) Add 7 kg of flour or 7 kg of crushed* grain (maize, wheat, barley, rye, rice, etc.) and mix thoroughly. In the case of cereals, it is preferable to pour boiling water over them.
3) Fill the wort with water up to 25 liters
4) If the total temperature is between 30 and 35°C, pour the contents of the packet on the surface of the wort
5) Stir after 15 minutes
6) Ferment at 25-30°C for about 21 days.
*The finer the raw material, the more cereal starch will be available to the enzymes that break it down into yeast-fermentable simple sugars.
During the first days of fermentation, it is recommended to stir the wort every day, as the raw materials fall to the bottom.
Warning: the wort will foam! Use a defoamer to reduce foaming.
Ingredients: glucoamylase, alcoholic yeast, Rhizopus oryzae mushroom 20%, alpha-amylase
One package should be completely used for one yeast!
