Enovini OK RED is a dry wine yeast that reduces malic acid in red wines from red fruits.
This yeast is suitable for cherry and dark grape wines. It will give the wines a balanced taste and a full fruit bouquet.
Reduces wine acidity – yeast reduces malic acid content in cherry and grape wines by 20-24%. This makes the wine softer and less acidic, making it more palatable.
Less sugar – using an acid-reducing yeast can successfully reduce the amount of added sugar, resulting in a good semi-sweet or semi-dry wine.
Harmonious taste and aroma of wine - Enovini OK RED yeast allows you to create balanced wines with a mild taste and interesting fruit aromas.
High quality yeast - with this yeast you will create the best homemade wines up to 14% ABV.
The package is intended for 25 liters of wine with a strength of up to 14%.
Method of use:
1) Mix the contents of the packet with 100 ml of boiled water cooled to 30°C
2) Wait 20 minutes at room temperature
3) Then add to the wine must in the fermentation vessel
4) Recommended initial sugar concentration - no more than 20°Blg, and acidity no more than 14 g/l (preferably 12 - 13 g/l)
5) Ferment at 20-25°С
6) When the sugar concentration drops to about 10 ºBlg (on the 2nd-3rd day), add another portion of sugar, for example 50 g/l. You can repeat steps 5-6. on the day of fermentation.
